Papouis started in a village called Athienou, Cyprus, back in 1967. A man named Costas Papouis began making halloumi the traditional way, with just four employees and a few hundred kilos a day for the local market . Fast forward to today, and it's one of the biggest dairies on the island, owned by the Pancyprian Organisation of Cattle Farmers, with a factory that churns out thousands of tonnes every year . They've kept the old recipes but added modern kit, international certifications, and a reach that goes to over 30 countries . Australians have been getting their halloumi from Papouis for years, and now you know the story behind it.
