It started with Dimitrios Kolios, who opened a small dairy making kasseri cheese in Polykastro, near Thessaloniki .His family had been making cheese for generations up in the mountains, using recipes passed down through the years .
By 1983, Kolios changed things up by launching Greece's first individually packaged cheese, a vacuum-packed kasseri that revolutionised the market .
They were also the first to put cooling tanks on farms and collect milk in modern tankers, which made the milk better and the cheese even better . Today, their ultra-modern factory covers over 50,000 square metres and their cheeses go to 55 countries around the world .
Still family-owned, still using those old recipes, still making cheese the way it should be made .
